What does 1,000 mesh mean - and why does it matter?

It means ULTRA-FINE grind. The finer the mesh, the smoother the texture and better dissolution.

What is the difference between Ceremonial and Culinary grade?

This is the most searched distinction in the matcha world and luckily BYG is crafted for both. Please speak to one of our advisor to choose the best grade to suit your need.

How should I store it?

Keep in a cool, dry and dark place. Use within 3 months after opening.

Why is my matcha bitter?

If your matcha tastes like grass-flavored battery acid, it’s likely due to one of three things:

Water Temperature: Never use boiling water. It burns the delicate powder. Aim for roughly 80°C (175°F).

Quality: Low-quality or expired matcha becomes significantly more bitter.  

Ratio: You might be using too much powder for the amount of water.If your matcha tastes like grass-flavored battery acid, it’s likely due to one of three things:

Do I really need a bamboo whisk (Chasen)?

While you can use a motorized milk frother in a pinch, a bamboo whisk is specifically designed to break up clumps and aerate the tea, creating that signature frothy "crema" on top. If you don't have one, sifting the powder through a fine-mesh strainer first is a non-negotiable step to avoid green clumps.

How do I store matcha to keep it fresh?

Matcha is highly sensitive to light, heat, and oxygen (it oxidizes quickly).  

Store it in an airtight, opaque tin.

Keep it in a cool, dark place (the fridge is actually ideal for long-term storage).  

Use it within 1–2 months of opening for the best color and flavor.
